Savour Apulia. Traditional recipes
The traditional recipes of Apulian cuisine, proposed and revisited by an expert in these pages, demonstrate how the table can and should favor the encounter between the different "cultures" assimilated over time by the same civilization. Simple in the ingredients but complex and articulated in the outcomes, they are recipes in which local strengths dominate, the genuineness of wheat and flour, extra virgin olive oil, vegetables, legumes and vegetables, sheep meat, fish and the famous dairy products, on the table with a thousand flavors of a region that is not only the “farm of Italy” or the “land of the olive tree”. Recipes that are custom and tradition in which the identity of an entire territory is reflected; a response of colors and flavors to these times of non-places and global food often forgetting the pleasures of good food.
